I don't know - I've never used it - the demo seems to make it look like its own product in its own right, lots of new features and a much improved workflow.
I couldn't say what Sonar 5 is similar to as I have never used Logic...
I understand what you mean by all the windows of Cubase but I think that has improved a lot and realistically almost everything can be done from the main project window now...
Just takes a bit of setting up, but once done it is worth it.
