Don't shun electric pianos and Hammonds. They are actually one of the rare instruments that fit in anykind of music. For example soft rhodes can easily accompany background pad. Mixing it really back (almost barely audible) it can do wonders to any stuff. And same goes to Hammond.
OT: Actually mixing back certain instruments can brighten the mix. For example I've even heard black metal track that was imporved greatly with an acoustig guitar strumming on the background. You couldn't actually hear the guitar, but if it was muted the mix got flat and boring. It's like magic.

As the ES rack doesn't have the sampling option, I'd say let it be. The sampling is afterall pretty important feature of a modern workhorse PCM synth.
